The Crafty Side of Crafty and Keto

When I started this blog, it was mostly to get my recipes out there and help people with their weight loss journeys as well, but I also wanted to show off some of my crafts and help people by showing them how to diy or even sell some custom crafts to them as well.

Sun Dried Tomato Spinach Dip Stuffed Chicken

 

Today I wanted something a little different, so I put a few things together and made a new recipe.

Preheat your oven to 400.

Cut and wilt a standard bag of spinach for about 5 minutes with a small amount of water in a pan.

While that is wilting, mix together a block of cream cheese, 15 oz of mayo, 1/2 cup of mozzarella, 1/2 cup parmesan, 3 oz of garlic paste,  and 2 oz of sun dried tomatoes.

Once wilted, add the spinach and mix until evenly distributed.

Now butterfly as many as 8 chicken breasts(I did 3 and have way too much mixture left over, but made for a great dip)

Salt and pepper the chicken then stuff with the mixture and close upside down with toothpicks.

Bake for 30 mins on this side. Then take out the toothpicks and flip. On top sprinkle with parmesan and mozzarella and bake for another 20 mins.

Mental illness and Keto my experience

This is going to be a hard post for me to write and might end up being hard for those to read who are experiencing the same things that I am. When I say mental illness, I am not speaking about psychosis, or bipolar. I am talking about depression and anxiety. Most specifically how it feels to be dealing with both in my brain while trying to keep with a keto lifestyle.

I haven’t delved into this very much on here, so this is going to be a very revealing post about myself personally for you guys.

As you all know, I have been living this keto lifestyle since January 8, 2018, and it has been serving me well. What you guys don’t know, is that I had surgery at the end of January. I won’t go into the gross details, but it was pretty rough on my body. I expected that. What I did not expect was the post-operative depression. It hit me like a bag full of hammers, and I have been dealing with it a little bit at a time from then on.

Now I don’t know about you guys, but I am an emotional eater. That is how I ended up at 309lbs. I didn’t know of a better way to deal with my anxiety and depression any other way, but I was determined to make this diet thing work. I was going to do this. I had to do this. I did not expect the depression to worsen when I couldn’t have ice cream and potatoes, but it did.  My husband, James, is the most supportive person I have ever had in my life(other than my best friend Dianna), but he couldn’t figure out how to fix me. With him not being on the diet with me didn’t help either. It was the hardest couple of months I think that I have dealt with in a substantial amount of years.

I am still currently dealing with that bit of depression now, but I got news that I am going to have to have another surgery very soon, and the thought of having to deal with that same depression is causing me more anxiety than I have ever had before a surgical procedure.

Y’all, I just want ice cream, and a big stiff drink, but I know that it will be counterproductive. I honestly don’t know how this is going to work in the end. I know that I have to stay strong and keep to my grind, but knowing that I am going to be banished to the couch for 8 weeks to sleep very little, but still try to come to work after the first 2 weeks is still so overwhelming. I feel like I am drowning in anxiety.

This is not a cry for help, but I feel like sometimes we need to know what others are struggling with to know that, yes while I may be the picture of a keto queen, I am human, and I am dealing with all of this on my end and having as hard of a time as you are.

Fat Bombs

Today I ventured out and made some new fat bombs. They are a combination of several other fat bombs. Each one has 1 macadamia nut which is optional. I am still waiting on them to cool, but here is the recipe.

1stick of butter or 4oz whichever is an easier method of measuring

1/2 cup or 4oz of cocoa butter chips

1/2 cup of coconut oil

3tbl spoons of vanilla

1/4 cup of stevia(can change to any sweetener you prefer)

Melted it all in the microwave until a clear mush mixture(took about 5 minutes)

Then put them into ice cube trays with one macadamia but in some and none in the others. They are currently in the freezer setting up. I also have a small bowl of the mixture in the fridge seething if it will set up like fudge too. I will add a picture of them after they are set.

BUTTER!!!!! New butters

Having trouble getting in your fats? Cooking chicken for the 4th time this week and would like to change it up a bit? I got these amazing new butters in the dairy section at Walmart. Yesterday was the first time I have ever seen them. I cut slots in a chicken breast, stuffed with onion and added the butter. Here’s a picture of the label on one of the two I bought to try. They are so good.

New Pork chop and Summer Veggie Recipe

Preheat the oven to 400 degrees.

Cut up the following veggies into half inch pieces.

1 red bell pepper

1 orange bell pepper

1 green bell pepper

2 Vidalia onions

2 yellow squash

Line a cookie sheet with aluminum foil, spray with olive oil spray and add these veggies. Then salt and pepper. Add minced garlic.

On top of this add thick cut pork chops. Salt and pepper those. Add basil, turmeric, and minced garlic over the entire thing.

Bake for about 45 mins or until the pork chops are cooked through and the veggies are soft.

If you want more fat, add a tablespoon of butter to the top of each pork chop.
